Apple Pie Recipe

Ingredients:

For the Pie Crust:

  • 2 ½ cups all-purpose flour
  • 1 tsp salt
  • 1 tbsp sugar
  • 1 cup unsalted butter, cold and cut into small cubes
  • 4-6 tbsp cold water

For the Apple Filling:

  • 6-8 medium-sized apples (Granny Smith and Honeycrisp work wonderfully)
  • ž cup sugar
  • 1 tbsp lemon juice
  • 1 tsp ground cinnamon
  • Âź tsp ground nutmeg
  • 2 tbsp cornstarch (to thicken the filling)
  • 1 tbsp butter (to dot the filling)

For the Topping:

  • 1 tbsp heavy cream
  • 1 tbsp sugar (optional)

Instructions:

1. Prepare the Pie Crust:

  • In a large mixing bowl, combine the flour, salt, and sugar.
  • Add in the cold butter cubes. Using a pastry cutter or your hands, work the butter into the flour until the mixture resembles coarse crumbs.
  • Gradually add cold water, 1 tablespoon at a time, and mix until the dough just comes together. Be careful not to overwork the dough.
  • Divide the dough in half, wrap each portion in plastic wrap, and refrigerate for at least 1 hour before using.

2. Make the Apple Filling:

  • Peel, core, and slice the apples into thin wedges. Place them into a large mixing bowl.
  • Add sugar, lemon juice, cinnamon, nutmeg, and cornstarch to the apples. Stir to coat the apples evenly with the spices and cornstarch.
  • Set the filling aside while you roll out the dough.

3. Assemble the Pie:

  • Preheat your oven to 425°F (220°C).
  • Roll out one portion of the dough on a floured surface to fit your pie dish. Gently press the dough into the dish, ensuring it covers the bottom and sides evenly.
  • Pour the apple filling into the crust, then dot the filling with small pieces of butter.
  • Roll out the second portion of dough and place it over the apples. Trim the excess dough and crimp the edges together to seal the pie.
  • Use a sharp knife to cut a few slits in the top of the pie to allow steam to escape during baking.
  • Brush the top crust with heavy cream and sprinkle with sugar for a golden, crispy finish.

4. Bake the Pie:

  • Place the pie in the oven and bake at 425°F for 20 minutes. After 20 minutes, reduce the temperature to 350°F (175°C) and bake for an additional 40-45 minutes, or until the crust is golden and the filling is bubbling.
  • Keep an eye on the crust towards the end of baking to ensure it doesn’t over-brown. If it does, cover the edges with foil.

5. Cool and Serve:

  • Once the pie is done, remove it from the oven and allow it to cool on a wire rack for at least 2 hours to set the filling.
  • Serve your apple pie warm or at room temperature. Pair it with a scoop of vanilla ice cream or a dollop of whipped cream for the ultimate indulgence.

Tips for the Perfect Apple Pie:

  • Choose the right apples: A mix of tart and sweet apples gives the filling the best flavor balance. Granny Smith apples add tartness, while Honeycrisp adds sweetness.
  • Chill your dough: For a flaky crust, it’s crucial to keep the dough chilled before rolling it out and baking.
  • Don’t overfill: Ensure the apple filling is slightly below the rim of the crust to prevent it from overflowing during baking.
  • Make ahead: Apple pie can be made a day ahead, allowing the flavors to meld together even better.
